Veggie Omelet

It doesn't have to be breakfast to eat eggs!  Eggs are low in calories and a great source of healthy fat and protein.  Each egg contains approximately 75 calories, 4.5 grams of fat and 6 grams of protein.  An egg is also a great source of B vitamins, vitamin D and other essential vitamins.  A good rule of thumb for an omelet is 1 whole egg plus 2 egg whites.  Add a little skim milk and your good to go.  Omelets are a great way to incorporate vegetables at any meal.  I like to add baby spinach, sun dried tomatoes and any left over vegetables that I have on hand.  Be as creative as you want and make your omelet your very own!
