Summer Squash Soup


Just because this recipe is made with summer squash does not mean it can only be enjoyed in the summer!  Make this delightful soup any time of the year for a great way to enjoy fresh vegetables with a lot of flavor.  The fresh lemon juice and spices make this dish super tasty.  Enjoy!

Ingredients:

-3 large summer (yellow) squash, diced            -26 oz low sodium chicken broth

-juice of 2 lemons                                                -1/2 tsp onion powder
-1 onion, chopped                                                -1/4 tsp cumin
-1 bell pepper, chopped                                    -1/8 tsp chili powder
-1/4 tsp turmeric                                                -salt and pepper to taste

Saute chopped seasonings (onion and bell pepper) in chicken broth on medium heat until onions are clear.  Cook diced squash in water in the microwave for 20 minutes.  Drain water from squash.  Puree cooked squash and seasoning vegetables in blender.  In a medium stockpot, add pureed squash and seasoning vegetables, chicken broth, lemon juice and spices.  Simmer on low to medium heat for about 20 minutes or until thoroughly heated.

*To make this a vegan dish, use vegetable broth instead of chicken broth.
