Spaghetti Squash, Spinach and Shrimp with Marinara Sauce


This dish is super-easy and packed with flavor!  Cook the spaghetti squash ahead of time (cut in half, remove seeds, cover with plastic wrap and microwave 17-20 minutes).  Top spaghetti squash with fresh baby spinach, a sprinkle of goat cheese and 2% shredded mozarella cheese.  Next add your favorite marinara sauce (I like Sal & Judy's Heart Smart Original).  Heat this in the microwave for 1 minute and you are good to go!  My lean protein for this dish was pan sauteed shrimp.  I started with a pound of peeled shrimp and sauteed them in fresh lemon juice, sea salt, onion powder and coarsely ground black pepper.  Enjoy!

1 spaghetti squash

fresh baby spinach

goat cheese crumbles

2% shredded mozarella

marinara sauce

peeled shrimp

1 lemon, sea salt, coarsely ground black pepper
