Southwest Soup


1 lb. 99% lean ground turkey 1 can kidney beans

1 pkg. taco seasoning 1 can whole kernel corn

1 pkg. ranch dressing 1 can pinto beans

1 can black beans 1 can Rotel tomatoes

1 large can diced tomatoes DO NOT DRAIN CANS

Brown ground turkey in a stockpot.  Add dry seasoning packets and stir.  Add UNDRAINED canned beans and corn. Heat and serve.  Serve with nonfat Greek yogurt, light sour cream and/or 2% shredded mexican cheese if desired.  Instead of ground turkey, you can substitute 96/4% lean ground beef or go completely meatless. To add veggies, add 1 bag of fresh baby spinach to pot after soup is thoroughly heated.  Crockpot version:  DO NOT DRAIN CANS.  Place all ingredients in a slow cooker.  Cover and cook on low for 5 hours.

If we put as much time and energy into our long-term weight management goals as we do into “quick-fix, fad diets” we would all be successful!
