Pumpkin Turkey Chili


-2.5 lb 99% lean ground turkey -2 (15 oz) cans pumpkin puree (not pie filling)

-1 large onion, chopped -1 (15 oz) can navy beans

-2 tsp chili powder, to taste -1 or 2 (4.5 oz) can chopped green chile

-1 tsp ground bay leaves -1 quart low sodium chicken broth

-1 Tbsp cumin -fresh cilantro, chopped*

-1 oregano -salt and pepper to taste

1. Cook chopped onions in chicken broth on the stove or in the microwave until clear.  Set aside.  

2. Cook turkey on stove until done.  Chop while cooking to avoid big clumps.  

3. In large stockpot, add ground turkey, onions and all remaining ingredients except Cilantro.  Simmer about 20 minutes or until hot.  

4. Top with fresh cilantro.

*Cilantro may also be added during cooking instead of at the end.
