Diets Don't Work!
If we put as much time and energy into our long-term weight management goals as we do into “quick-fix, fad diets” we would all be successful!
About Lori
I have seen a few different versions of these cookies. They are similar to "energy bites" that are made with peanut butter and seeds, however, these DO require baking. I have modified a few different recipes and this is what I came up with. These cookies make great pre or post-workout snacks. This recipe makes 12 cookies. Each cookie contains 72 calories and 6 grams of protein. Enjoy!
Ingredients:
-2 scoops of vanilla protein powder (I like Sunwarrior vegan)
-1/4 cup PB2 (peanut butter powder)
-1 medium banana (mashed)
-1/4 cup ground flax seeds
-2 Tbsp. of chia seeds
-3 Tbsp. sugar free chocolate chips (Hershey's)
-1 Tbsp. water
In a mixing bowl, mix protein powder, PB2 powder and mashed banana. Next add ground flax seeds and chia seeds. Stir together. Next add water. Mix in chocolate chips. Form 1 1/2 Tbsp. sized balls and flatten to cookie shape. Add any loose chocolate chips on top of cookies before baking. Bake 9 minutes or until slightly brown at edges.
