Creamed Spinach and Artichokes

This veggie dish is super-easy, delicious and takes no time to prepare.  The Greek yogurt adds creaminess and a nice touch of protein.  It can be served as a side dish or as a dip along side of fresh salsa.  What's not to love?! Enjoy!


2-10oz pkg frozen chopped spinach, cooked and drained

1 can artichoke hearts, chopped

1-6oz container plain, nonfat Greek yogurt (I used Fage)

4oz chicken or vegetable broth (I used low sodium)

1/3 cup Parmesan cheese

salt, pepper and onion powder to taste

In a medium sauce pan, add all ingredients, stir and cook on low-medium heat.  Cook 10-15 minutes or until thoroughly heated.  Serve immediately.  

Diets Don't Work!

If we put as much time and energy into our long-term weight management goals as we do into “quick-fix, fad diets” we would all be successful!
