Chicken Tortilla Soup


CHICKEN TORTILLA SOUP

1 can Healthy Request Cream of Mushroom Soup

1 16oz jar of salsa (mild)

1 pkt taco seasoning (mild)

2 15oz cans chicken broth

4 boneless, skinless, cooked chicken breasts or 2 lbs. shaved,         

     chargrilled chicken from Maxwell’s Market

2 fresh limes, juiced

1 bunch fresh cilantro, chopped

4 oz 2% Velveeta, cubed

tortilla strips

In large stockpot, add mushroom soup, salsa, taco seasoning and chicken broth.  Whisk together and heat on low-medium heat.  Next, add limejuice, cilantro, chicken and Velveeta cubes.  Heat thoroughly and stir to melt cheese.  Serve with tortilla strips for garnish.

This is a healthy dish that is yummy and easy!
