Balsamic Sauteed Mushrooms, Kale and Tomatoes


This dish is a great combination of flavors and textures.  I used 1 large container of sliced mushrooms (pre-washed), 2 fresh tomatoes (chopped) and about 3 cups fresh chopped kale.  Add all fresh ingredients to a large pan and drizzle heavily with balsamic vinegar.  I seasoned with coarsely ground salt and pepper, and onion powder.   Saute on medium heat, loosely covered until cooked.  Cook for 1-2 minutes without lid.  This dish can be eaten alone or on top of fresh steamed spaghetti squash.  Enjoy!
